This is an old recipe of my mom's. You can easily vary this by changing the cookie base and ice cream flavor, it is a big favorite in our family. I always double this recipe to make one very large pie or two smaller ones.
- 25 vanilla wafer cookies
- 1 quart vanilla ice cream
For fudge topping
- 1 cup evaporated milk
- 1 (6 ounce) package semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1⁄4 teaspoon salt
- In a heavy saucepan melt together milk, chocolate chips, marshmallows and salt. Stir until chocolate and marshmallows are completley melted and mixture thickens. Remove from heat and allow to cool to room temperature.
- Line the bottom and sides of a 9 inch pie pan with the vanilla wafers. Spoon half of the vanilla ice cream on top of wafers. Cover with half of the chocolate mixture. Repeat layers. Freeze, remove from freezer for about 10 minutes before serving.
