I made this cookie last year for the holidays and everyone asked me to make it again this year.

  1. Preheat oven to 325.
  2. Sift together flour, baking soda and salt. Set aside.
  3. Cream butter, peanut butter white sugar and brown sugars until fluffy.
  4. Mix in egg and 1/2 tsp vanilla.
  5. Stir in flour mixture into creamed mixture.
  6. Shape dough into 48 balls, 1 inch each.
  7. Place each ball in one compartment of a mini muffin tin.
  8. Bake for 14-16 minutes or until lightly browned. Remove from oven and immediately make wells in the center of each using a melon baller.
  9. Cool in pan for 5 minutes.
  10. Then carefully remove to wire racks.
  11. Using a measuring cup fill each shell with the chocolate mixture. Top with a pecan half.
  12. For filling, put chocolate chips in a double boiler over simmering water. Stir in milk and vanilla, mix well.
  13. **I also melt white chocolate and drizzle over the completed cookie cups for a finishing touch.

I was going to publish this recipe but I see you had beat me to My son entered this into the county fair and he won first place. The only thing different with my recipe is instead of putting pecans on at the end, we put 2 Tbsp of chopped peanuts. Yummy cookie!!

Wow what an incredible cookie. I made these twice. The first time I read the instructions wrong and baked the fudge part with the cookie. The kids loved them. Then when I realized my mistake, I cooked them according to the instructions. Everyone agreed that baking as written is best. These treats have a nice crispy cookie outer shell with a wonderful fudgy filling in the center. They are easy to make, but if you are looking for a show stopper cookie, this is it. Thanks for the recipe.

I discovered these three years ago and have been making them every year during the holidays since. I'll never forget my grandmother's response after she first bit into one: "Where have you been all my life?!" They are rich... very rich and incredibly delicious.
