Great tasting, lovely looking cookies to enjoy. No need to wait for the holidays to make these. Also, they contain no eggs. One of my son's most requested cookies.

  1. Cream butter, salt & vanilla till fluffy; beat in sugar.
  2. Blend in flour, milk, and mini chocolate chips.
  3. Shape into 1" balls. Place on ungreased baking sheet. With finger or thumb, poke depression in each.
  4. Bake in 375 degree F. oven for 10-12 minutes.
  5. Roll while warm in confectioners sugar. Set aside while you make filling:.
  6. Melt chocolate chips with shortening; stir.
  7. Cool a little.
  8. Blend in corn syrup, water and vanilla.
  9. Fill cooled cookies.

This cookie is very easy to make and lasts a long time on a cookie tray without drying out. The chocolate filling stiffens very nicely, and I would like to use it to make a filling for a sandwich type cookie next time.
