This is an amazingly easy, super fudgy cake. This is usually the first recipe my girls try out when they're ready to start baking cakes.
- 2 1⁄2 cups flour, sifted
- 2 cups sugar
- 3⁄4 cup cocoa
- 3 1⁄2 teaspoons baking powder
- 2 1⁄2 teaspoons instant coffee
- 1 1⁄4 cups water
- 1 1⁄4 teaspoons vanilla
- 1 teaspoon rum
- 4 eggs
- 3⁄4 cup oil
- Mix all ingredients together.
- Bake in a greased pan in a 180 degree C oven for 1 hour.
Great cake, made two, one as the recipe, one with barley and rye flour substituted for wheat flour and both got rave reviews from the kids!!
It was a very moist cake and so simple to make. Nice flavor.
