Fudge

"When my mother died, my brother was still living in the house. When he moved, he sold everything without telling me and all my mothers' recipes were in the stove drawer. I could have killed my brother because the one thing that meant the most to me in that drawer was her Heavenly Hash recipe. I've been searching since then for something close, cause I always got home from school just as she was finishing the fudge. I sure miss hers. So this is kind of close to it. I got it from a NOPSI cookbook they printed and sent out free at the early part of the introduction of the cookbook. The recipes used to be furnished in a little brochure they had in the buses and street cars. I still wish I had my mother's recipe. All our family liked it and she made a large amount around the holidays for when the family came over."

  • Combine sugar, cocoa and salt.
  • Stir in milk and syrup.
  • Cook over medium heat, stirring constantly, until sugar dissolves.
  • Cover; cook for 3 minutes.
  • Remove cover, continue cooking without stirring, to 236 degrees or soft ball test.
  • Remove from heat, add butter and cool to lukewarm.
  • Add vanilla and, if desired, add the variation listed below.
  • Beat candy until creamy and thick.
  • Pour into buttered 9-inch square pan.
  • When cold, cut into 1 1/2-inch squares.
  • HEAVENLY HASH: Add 1 cup pecans.
  • Sprinkle 1/2 cup miniature marshmallows over bottom of pan.

I could not get mine to set up don't know what I did wrong I went right by the recipe but it was sooo delicious that I decided to pur it into canning jars and can it for my 2 oldest sons for christmas. I called it choc. fudge sauce we did try some of it heated up over panakes and it just flew out of the jar! So I thought it would be good served warm over biscuits, ice cream , pancakes or etc... thanks for a great recipe!
     
  2. I have been looking for a fudge receipe like my mother's also. She used regular kitchen staples and would beat it until lost gloss. She would just butter a dinner plate and pour on it! I hope this is it! I will let you know!

I live very close to my mother's family and enjoy it. My children are all within a 100 mile area in LA. I love my family very much! All of them. I am disabled. My favorite cookbook is "Recipes and Reminiscences of New Orleans" given to me by my past and late mother-in-law. I love to cook and garden and be with my grandchildren. My pet peeve is dishonest people. If I could do anything in this world, it would be to take a cruise to Alaska!
