Breakfast scramble, phase 1 compliant for the Fat Smash Diet
- 3 egg whites
- 1⁄4 cup chopped tomato
- 1⁄4 cup diced onion
- 1⁄4 cup diced pepper
- 1⁄4 cup sliced jalapeno (optional)
- salt (to taste)
- black pepper (to taste)
- In a non-stick pan, briefly saute onion, tomato and peppers. They should give off enough liquids on their own to prevent sticking with no oil.
- As the onions start to soften,add the egg whites, and scramble with the vegetables.
- Season and plate.
Fantastic basic recipe - I love any breakfast with 3-4 veggies so you're off to a healthy start, even if you're bad the rest of the day. I was surprised how the tomato liquid made it so cooking spray wasn't necessary.
This was so good that I made more. I used egg substitute instead because I didn't want to waste a whole egg. It was a nice change from the scrambled eggs I usually have.
