- 2 cups frozen corn
- 2 (16 ounce) cans black beans, drained and rinsed
- 1 large jalapeno, remove seeds and finely dice
- 1⁄2 red onion, finely diced
- 2 tablespoons fresh cilantro, coarsely chopped
- 2 limes, juice of
- salt and pepper
- Combine all ingredients, mix well.
- Let sit 20 minutes. Tastes better the next day!
