  • Heat the oil and fry the onions until transparent.
  • Add the apple, meat and garlic, and stir until meat is lightly browned.
  • Stir in the flour and curry powder, cook over low heat for one minute.
  • Gradually add the stock and bring to the boil.
  • Add 1/4 cup of the pineapple juice.
  • Simmer for 30 minutes,.
  • Add sultanas, drained pineapple and lemon juice.
  • Simmer another 30 minutes.
  • Add salt and pepper.
  • Serve with rice.
