Discovered this on busycooks.com and it turned out to be worth every minute spent on preparation !
- 1⁄2 lb creamy deli fruit salad
- 1 cup chopped roasted deli chicken
- 8 lettuce leaves
- 4 pita breads, cut in half and gently separated to form pocket
- In a medium bowl, combine fruit salad and chopped chicken.
- Line pita breads with lettuce leaves and carefully spoon chicken mixture into the breads.
- Enjoy a hearty sandwich!
