- Put the first 4 ingredients in a pan, bring to the boil and mix together, let the mixture cool slightly then add flour and mix thoroughly.
- Grease and line a 900 g loaf tin, pour in mixture and bake for 1 hour at 160 C / 325 F / Gas 3.
- Leave to cool, remove from tin and slice. Note: Tropical dried fruit such as mango, pineapple and apricots gives a summer feel to a glorious cake!
