- 3 1⁄2 cups oats (rolled oats or quick cooking oats)
- 1⁄2 cup dried cranberries
- 1⁄2 cup dried plum
- 1⁄2 cup dried apricot
- 1⁄2 cup mini chocolate chip
- 1⁄4 cup flax seed meal
- 1⁄2 teaspoon cinnamon
- 1⁄2 cup light brown sugar
- 1 tablespoon salted butter
- 1⁄4 cup honey
- 3 eggs
- 1 teaspoon vanilla
- 1⁄4 cup water
directions
- 1. Preheat oven to 350 degrees F.
- 2. Combine oats, dried fruits, chocolate chips and flax seed meal in a bowl.
- 3. In a microwaveable container melt butter, brown sugar and honey; once all are melted mix in cinnamon, vanilla, eggs (slightly beaten) and water. Mix well.
- 4. Mix dry ingredients with wet ingredients. (mixer works best).
- 5. Press mixture firmly into a 9 x 13 baking pan that has been sprayed with cooking spray or brush with oil or butter.
- 6. Bake for 18-20 minutes until firm.
- 7. Cool before cutting into bars.
