- 1 1⁄4 cups all-purpose flour
- 3⁄4 cup quick-cooking oats
- 1⁄2 cup packed brown sugar
- 1⁄4 cup wheat bran
- 1 tablespoon baking powder
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon ground allspice
- 1⁄4 teaspoon salt
- 1 cup halved seedless grapes
- 1⁄2 cup grated carrot
- 1⁄2 cup nonfat milk
- 1⁄2 cup applesauce
- 3 tablespoons canola oil
- 1 egg, beaten
- 1⁄2 cup chopped walnuts
directions
- Preheat the oven to 350°F.
- 2.Line 12 muffin cups with paper liners, and set aside.
- 3.Combine the flour, oats, sugar, bran, baking powder, cinnamon, allspice, and salt in a medium bowl, and mix well. Add the grapes, carrots, milk, applesauce, oil, egg, and 1/4 cup of the walnuts. Stir just until combined. Spoon the batter into the prepared muffin cups (they will be very full), and sprinkle with the remaining 1/4 cup walnuts. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
