Fruit Juice Pudding (Saftkram)

"This is the traditional dessert at my community's Swedish smorgasbord. It's a sweet thin-set pudding served with milk or cream. I like this made with grape or any dark red berry juice. From my Grandma's "Swedish Food" cookbook."

  • 1 12 cups fruit juice or 1 1/2 cups berry juice
  • 2 12 cups water
  • 34 cup sugar (to taste)
  • 3 tablespoons cornstarch
  • slivered almonds, garnish

directions

  • Bring juice, water and sugar to boil.
  • Mix cornstarch with a small amount of cold water.
  • Remove saucepan from heat and whisk in cornstarch.
  • Return to heat and bring to boiling point.
  • Simmer 3-5 minutes, stirring occasionally.
  • Remove to serving bowl, cover and chill.
  • Garnish with almonds if desired and serve with cream or milk.

  1. This is a bit of a prereview as my pudding has not fully set. I made mine with one of those carb control cranberry juices and splenda. Added the Splenda after cooking which experience says is best. Tastes wonderful but has a slight brownish color so I added 2 drops of red food coloring to make it appear a bit brighter. Looking forward to this guilt-free treat.

I'm a stay at home mom with 3 adorable children-an 8 year old daredevil son, a 5 1/2 year old princess and a wild little 2 year old girl! I love to cook, and like having my little helpers in the kitchen! I usually love recipes that are completely from scratch (I still love them actually) but right now my focus is on having any kind of food ready by mealtime! It's a little crazy here lately. Every summer we have a huge organic garden, apple orchard and raspberry and blueberry patches, along with a woods full of wild foods waiting for me to learn what they are so I can collect them. I'm learning about wild mushrooms first, so if anyone has any tips, let me know. We also eat wild venison which my husband and I hunt ourselves. It's our favorite meat, since it's lean, organic and cheap! Some of my hobbies are: hiking, biking, rock climbing, gardening, playing in the water with my kids, or just swinging in the hammock with a good book. I go stir crazy if I spend too much time inside.
