- 8 pieces fresh pineapple
- 1⁄4 cup pineapple juice or 1⁄4 cup orange juice
- 3⁄4 cup shredded coconut, toasted

- line cookie sheet with waxed paper.
- insert wooden skewer or toothpick into one end of the pineapple.
- dip in juice.
- then roll in coconut, coating completely.
- place on cookie sheet.
- freeze for 1-2 hours or until firm.
- let stand for 5-10 minutes before serving.
