Ingredients Nutrition

  • 8 pieces fresh pineapple
  • 14 cup pineapple juice or 14 cup orange juice
  • 34 cup shredded coconut, toasted

Directions

  1. line cookie sheet with waxed paper.
  2. insert wooden skewer or toothpick into one end of the pineapple.
  3. dip in juice.
  4. then roll in coconut, coating completely.
  5. place on cookie sheet.
  6. freeze for 1-2 hours or until firm.
  7. let stand for 5-10 minutes before serving.
