This is very good! It uses pineapple schnapps which I just happened to pick up some recently, although you could probably easily substitute a pineapple liqueur if you don't have schnapps handy.

Ingredients Nutrition

  • 1 12 ounces light rum
  • 12 ounce pineapple schnapps
  • 34 ounce pineapple juice
  • 12 cup frozen pineapple chunks
  • 12 cup ice

Directions

  1. Put all ingredients into blender and puree until smooth.
  2. Serve in a stemmed cocktail glass, garnished with fresh fruit or a cherry, if desired.
