This is a great recipe, so quick to throw together! This cake is moist and tasty. I topped mine with toasted coconut.
The pineapple flavor in this cake is really wonderful! I love that you don't have to discard the juice in this recipe - instead, it makes it really moist and tasty. I actually found the surface to be very tender. I also tried adding a drained 8-oz can of crushed pineapple to the cream cheese frosting, and I thought it was a pleasant addition.
This was a quick and simple recipe. Being able to dump all ingredients into the bowl at once saves a lot of time! The cake was done in 40 minutes, and after cooking completely, I spread the frosting on the cake. I thought the frosting might have needed a little extra powdered sugar for texture and sweetness, but it was perfect just as it was! The surface of the cake itself was little hard to cut into to slice, but inside it was moist, and the taste of the pineapple really came through.
