- 3 egg yolks
- 1 cup brown sugar
- 1⁄2 cup cold water
- 1 1⁄2 cups butter
- 1 cup molasses (Dark)
- 1 tablespoon cinnamon
- 1 tablespoon ginger
- 1 tablespoon baking soda
- 1 pinch salt
- 6 -8 cups flour
directions
- Combine egg yolks (save some of the whites), sugar, water, butter and molasses.
- Add about 4 cups of the flour plus the cinnamon, ginger, baking soda and salt. Keep adding flour until you get a soft dough.
- Roll 1/4 inch thick and cut into squares (or use cookie cutters, but squares are traditional).
- Bake to a light brown at 350 degrees for about 11 minute
- When cool, frost with egg whites (one or two that you saved) stiffened with powdered sugar. Should just be a thin glaze. Let dry thoroughly before putting away. These cookies freeze well.
