Simply delectable! I made this recipe both with and without nuts. (One batch was made for the nursing home residents, and we’re not supposed to share treats with nuts because of possible allergies.) Both batches were a huge success! At the nursing home, not only did the residents love them, but the ladies who were serving with me had to try them and then insisted that I share the recipe. It’s a great feeling to find something out of the ordinary to share with those special residents at the nursing home. Of course, with nuts, they are just that much better! You can’t find this kind of cookie in a store. It not only tastes good, but looks good, too. I think the key ingredient, cranberries, is what makes them so special. (I buy fresh cranberries when they are on sale and keep them in the freezer for when I need them.) The fresh cranberries, which are on the tart side, combined with the sweet frosting, provide a mouth watering sensation. WiGal, thanks for sharing this wonderful recipe and the tip about freezing them. That worked great!
