Frosted Banana Bars

Very good and light recipe that comes from Taste of Home Mag. I have changed the ingredients to lower the fat in the recipe from the original. This is different from some of the other's posted as it has less sugar, less eggs and adds sour cream. We love this recipe.

  1. In a mixing bowl, cream butter and sugar.
  2. Add eggs, sour cream and vanilla.
  3. Combine flour, baking soda and salt; gradually add to the creamed mixture.
  4. Stir in bananas.
  5. Spread into a greased 15x10x-inch baking pan.
  6. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool.
  8. For frosting, in a mixing bowl, beat cream cheese, butter and vanilla. Gradually beat in enough confectioners' sugar to achieve desired consistency.
  9. Frost bars. Store in the refrigerator.

Oh my these are really good. I followed the recipe exactly as written except I didn't make the frosting as I am not a real fan of frosting. The bars themselves were so good though. Very moist and tasty. Made for Spring PAC 2012.

Delicous bars! I've been using this recipe from TOH for a while. My DH took a pan to work and they got rave reviews! One lady said it was THE best bar she's ever had. I usually replace the sour cream with nonfat plain yogurt, because I always have that on hand. I have also topped the bars with just a drizzle of warm icing to lower the calories a bit more.

Yummy! I've made these often with overripe bananas then store them in the freezer. Just put frozen frosted bars on a serving plate about 20 minutes before you need them. I will admit, I've eaten more than one straight from the freezer. The frosting is so good! Thanks, CrinV, for posting!
