- 1⁄2 cup butter, softened
- 1 1⁄2 cups brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon clove
- 3 1⁄4 cups flour
- 1 teaspoon salt
- 2 cups grated apples
- 1 1⁄4 cups chopped dates
- 1⁄2 cup pecans (optional) or 1/2 cup walnuts (optional)
- 12 ounces cream cheese frosting (or homemade)
directions
- Beat together butter, sugar, egg, and vanilla.
- Add soda and spices.
- Blend in flour and salt.
- Fold in apples, dates, and nuts (if using). Drop by spoonfuls onto a cookie sheet coated with nonstick spray.
- Bake 10-12 minutes.
- Let cool, and frost with cream cheese frosting.
