  • 12 slices whole wheat bread
  • 12 cup unsweetened vanilla Almond Breeze
  • 2 tablespoons cornstarch
  • 14 cup chickpea flour
  • 2 nonstick cooking spray

Directions

  1. Mix ingredients.
  2. put bread in there.
  3. heat nonstick skillet.
  4. cook each side till brown.
  5. yum.

I just use soy or rice milk (whichever I have on hand) and this always turns out amazing! Then again, what from this cookbook doesn't?? Of course I know this recipe sounds really strange but it seriously tastes just like french toast. If you can't find chickpea flour you can toss some dry (roasted if you prefer) chickpeas into the food processor and make your own. Just make sure to sift it once you're done to remove any huge chunks and be prepared because this is the noisest thing I have ever done in my kitchen.
