Flavorful and filling, this Southern recipe comes from the Creole chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
- 2 egg yolks
- 1 cup whole milk
- 1⁄4 teaspoon salt
- 4 1⁄2 cups cheese, grated (any yellow cheese such as American, Brick, or mild Cheddar)
- paprika, for garnish
- Preheat oven to 300F and lightly butter 6 ramekins.
- Beat eggs light; add remaining ingredients.
- Bake about 15 minutes or until set.
