This is a favorite in our home! I make it fairly often. The only things I do differently is I use frozen corn (thawed of course), and I add 1/3 c. chopped cilantro!
I tried this on a ladies' potluck lunch recently. Was a big hit. I doubled the amount of peppers (used red and orange), and cut the mayo in 1/2. (you can always add more). Taste was very clean and fresh. As noted, important to drain corn really well, and only add fritos right before serving. Also easier to eat if you crush the fritos up a bit.
This was delicious and I will make again. But I am puzzled by the 15 servings...I relied on that and ended up with not enough. As written, the recipe serves about 8 people with moderate helping sizes.
Have made this a few times before and don't know why I don't do it more often, it is real good. Like another suggested I used half mayo and half Russian dressing combined. The addition of any salad dressing of your choice really makes a big difference. If this serves 15 folks, everybody must only get 1 tbl each. Serves more like 5 or possibly 6.
I was so shocked at how this tasted...has a uniqued flavor and is quite tasty. I added about half the Fritos and placed more beside so we could add more if we wanted. Great recipe!
This was a very tasty salad and we really liked it. The leftovers tasted just as good as the first day. Instead of putting the Fritos in the salad I put them on the side so everyone could add as much as they wanted. Thanks Kaykwilts for such a nice salad recipe.
So good. I prefer no onions. And i use Fat Free mayo & lite cheese when i can. This is quick and delicious! Oh and drain the corn really well or else the mayo gets watery.
This was easy to make and delicicious. It was a real hit at our 4th of July BBQ. I didn't use the red pepper, just green pepper and used the original Fritos. I agree with Bullwinkle about serving the Fritos on the side.
This is a version of one I have made for years called "suitcase salad." Handy because you can just take a bag of Fritos, 2 cans southwest style corn and a bottle of Catalina dressing and mix it up anywhere. I do like a lot of the fresh veggie suggestions given!
This is a wonderful salad - try it with 1 can of yellow corn and 1 can of white corn! Just a little twist!!
