This recipe was given to me at a campout . My friend made this for the potluck. It was a hit all around.
- 2 -16 ounces whole kernel corn
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1 cup green onion
- 1⁄2 cup mayonnaise
- 1 cup cheese
- 9 3⁄4 ounces Fritos corn chips
- Drain canned corn. Dice peppers and green onion. Put in a large bowl and add mayonaise , you could increase this to 1 cup and cheese. Just before serving add the Fritos. The recipe calls for chili cheese Fritos.
I make this using the mexi corn and it comes out awesome. This recipe is very good and is a hit.
Crisp, cold, and tasty! This is perfect for summertime backyard BBQ cookouts.
I made this and loved it! I just crunched the chili corn chips up a little and put them on top of the mixture instead of mixing them in. I believe the fritos stay crunchier much longer this way...and leftovers are still tasty!
