Friedel's Old-Fashioned Baked Beans

  • Soak beans overnight in cold water.
  • Drain.
  • Rinse beans, then place in a saucepan along with the cold water.
  • Heat water to boiling and simmer beans for 30 minutes, then drain.
  • Place onion slices in the bottom of a 6 cup casserole.
  • Mix seasonings and turn into the pot.
  • Add beans and water to cover.
  • Arrange bacon on top, before covering and baking in an oven for 7 hours at 250 F.
  • In the middle of the cooking, when the beans have become soft enough, remove 1 cup of beans, mash and then stir back into the pot.
  • Cover and continue to bake, adding water as needed to keep the beans just covered.
  • One hour before serving, remove cover to darken the beans.

  1. Friedel, Thank you for posting this recipe. It is the best baked bean recipe I have tried AND I have tried many recipes in the past 6 months. It is well worth the time spent in cooking these beans. I was thinking that the vinegar must help to soften the beans. My family loved them. I am actually eating baked beans on toast for breakfast right now as I type this review. I just couldn't wait to tell you that they turned out fantastic!!! The addition of bacon was so self-indulgent but I ain't complaining. ;-)

  3. I agree - the best ever! Try cooking them in the crockpot, if you don't want to have your oven on all day. I still simmered for 30 minutes, then cooked in the crockpot, adding a bit more water, on high for 8 hours, then on low for 2. Still a lot of cooking time, but less confining...and still AWESOME! I'll never buy beans again. Thanks for a great recipe! wmg
     
  4. These really were awsome baked beans. I doubled the recipe and it was easy and very yumpy! We had a big BBQ on July 1st with LOTS of people, and everyone was very impressed. We all agreed that they are SO much better than canned beans. Thanks so much for the great recipe, I will be making these again!
     
  5. My husband could not stop commenting on how delicious these beans were while he was eating them. He had two huge bowls, and gave them five stars, a rare compliment from him! I heartily agree with him! I did add the bacon and was very happy I did. The only thing I found was that eventhough I added just enough water to cover the beans when I started, there seemed to be a lot of liquid about half way through. I vented the beans after that and took the cover completely off for the last hour. I also let them stand about 25 minutes after taking them out of the oven and they thickened quite nicely. Otherwise, I made them exactly as stated (I used black-eye peas and they worked pefectly!) DH has already asked me to make them again! Terrific recipe that is highly recommended!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
