Fried Rice With Sausage and Lima Beans

  • Remove casing from sausage link. Crumble and saute in an iron skillet until no longer pink. Remove from skillet and set aside.
  • Saute onion in same skillet for 5 minutes. Add mushrooms, butter and oil, if needed. Saute an additional 10 minutes, until mushrooms are softened. Add salt and pepper to onion mixture.
  • To onion mixture, add cooked rice and poultry seasoning. Saute approx 5 minutes. Add soy and ponzu sauces. Stir.
  • To rice mixture, add cooked sausage and lima beans. Saute 1 minute.
  • Creat a well in the center of the skillet. Add beaten eggs. Cook until eggs are scrambled, approx 2-3 minutes. Incorporate eggs into the rice mixture.
  • Serves 4.
