From the Atlanta cookbook "Ladles of Love," Temple Sinai. Uses 4 cups cooked rice so good recipe if you have leftover rice.

  1. Fry eggs in oil until firm. Add salt and pepper and cut eggs into shreds.
  2. Add mushrooms and onions and cook over medium heat for 5 minutes, stirring constantly.
  3. Add rice, soy sauce and sugar. Mix in pot until heated through over medium heat.
  4. Serve hot.
