  • 1 12 cups cooked sushi rice
  • 4 eggs, scrambled
  • 8 ounces pea pods
  • 1 cup sliced carrot
  • 8 ounces sliced mushrooms
  • 8 ounces edamame
  • 1 cup of sliced celery
  • 4 tablespoons gluten free soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons sesame oil
  • 1 head garlic, minced

directions

  • cook rice.
  • Scrambled eggs.
  • Slice and chop vegtables and saute with olive oil and garlic.
  • Add rice, soy sauce and sesasme oil and heat through.
  • Gentlly fold in eggs and serve.

  1. Made for PAC Spring 2014. Omitted celery due to an allergy, and used a naturally brewed soy sauce (not gluten free). I used only 2.5 tbsp. of soy sauce and it was enough, it really would depend on the brand. This was good. High veggie to rice ratio, and the snap peas are very good in this dish. Added sliced green onions for garnish. Not sure if I like the texture of the edamame in this dish, not snappy enough and too "beany". I would make again, but sub bean sprouts for the soy beans. Thank you for a good, filling dinner!
