      Although it was very good, this recipe calls for too much mustard! I eat at Cafe on the route at least once a month and the fried potato salad they serve does not have that much of a mustard taste. I would only use about 1-2 tbsp if you want it to taste like the restraunt's version. Also, theirs has crisp bacon pieces tossed in. Gooooood stuff!

      I actually have eaten at Cafe on the Route (Baxter Springs, KS), and this is an absolutely amazing side dish! I was so excited to find this recipe posted here. I think you could certainly adjust the mustard-to-mayonnaise ratio to suit your individual taste and it would STILL come out amazing. My lunch partners and I all thought that this side dish stole the show! Can't wait to make this at home!

      This was pretty yummy, but I think it's a bit heavy on the mustard. After tasting the mayo mix, i took a bunch out, then added a bunch more mayo, but the mustard flavor was still too strong. I would personally go with just a dollop of mustard, and then maybe fry up some onions or other veggies to go with it. Definitely worth trying though!
