I'm pregnant with my first and having been craving potatoes in all forms this week. Hubby made these for dinner tonight and they really hit the spot. Perfectly crispy on the outside and soft and moist on the inside. The cayenne pepper added just the right amount of kick and flavor. We didn't change a thing and will definitely make them again! Thanks! :)
These were really good. I served them with smoothies for breakfast. I love the spiciness of them, and they went great with ketchup.
We enjoy these and I have made several times now, especially when I am serving something else that might not be so popular (always have at least 1 menu item that you know is a winner!). I usually use egg substitute to reduce cholesterol and this works well (also handy when cutting recipe in half).

These were very good! I used frozen hash browns (thawed & squeezed dry between paper towels), and I left the seasonings as posted. I used non-stick spray (I don't like to fry), but later added some bacon fat (yum--onions & bacon!!) because the pan was too dry. They did brown nicely, but unfortunately they didn't hold together very well. Maybe I used too much of the hash browns for one egg to hold it all together? Not sure - next time I will try two eggs & see if that helps. These were certainly tasty with the steaks & green salad I fixed to go with them. Thanks for posting! -M :-)
When Bergy posted the photo of these, I just had to try them. Am I ever glad I did! These potato patties were very good. I did cheat by using about 2 cups of frozen hash browns. I love recipes that come together quickly...that's always a big plus for me. Thanks a bunch Marie for sharing this recipe.
Excellent potato patties crunchy on the outside and soft in the center. I cut the recipe in half with no problems - left the cayenne at 1/8t plus a bit. I cut back on the frying oil and they still browned well. Cooked over medium high heat on first side for 4 minutes cut down to medium heat flipped them & cooked for a further 6 minutes. Served for Sunday Brunch with stuffed mushrooms Soft boiled eggs, hamburger pattie 12 grain toast coffee etc etc Thanks Marie loved them
