This is one of my favorite dishes from my visits to Mandeville, Jamaica.
- Peel the plantains and cut them in 1/2 on a bias, then slice in 1/2 lengthwise so you have 4 pieces.
- Heat the oil in a large heavy skillet over medium heat.
- Fry the plantains until golden on both sides, about 5 minutes per side.
- Remove to a plate lined with paper towels and sprinkle with salt.
- Serve with lime wedges.
This recipe was a little bland for me. Also, the plantains cooked really fast. It probably had something to do with the size that I cut them.
These are a great breakfast instead of fried potatoes. I made 1/2 of a plantain following this recipe, and the other 1/2 without the salt but sprinkling with sugar before removing from the pan (to see which recipe I liked better). I actually really liked both. This one is better as a breakfast or side dish in place of potatoes or rice. The other would make a great dessert or sweet snack. Great either way!
These where pretty good. Not what i usualy think of when i think of plantains but good. I think im more used to friend plantains. But i will still give these five stars becouse we ate them all!
