  1. Break dry cauliflower into florets.
  2. Place florets in the 2 tablespoons water and steam in microwave, covered, for 3 to 6 minutes.
  3. Drain and cool completely, 3 to 5 minutes.
  4. Place flour in one bowl.
  5. Beat eggs, cheese, salt and pepper together in a separate bowl.
  6. Finely chop parsley and add to egg mixture.
  7. Heat the olive oil in a large saucepan, over medium until hot, but not bubbly.
  8. Dip florets in flour, then in egg mixture.
  9. Fry florets until brown.
  10. Drain on paper towels.
  11. Serve.
