  • 1 quart oyster
  • 2 eggs, slightly beaten
  • cracker crumb (saltines)
  • oil or fat, for frying

  • Preheat fat to 380°F.
  • Wash and drain oysters.
  • Beat eggs.
  • Dip oysters into cracker crumbs; dip into egg and again into crumbs.
  • Fry until golden brown and drain on absorbent paper.
