These are pretty good. The holidays are coming and we always have leftover mash potatoes. These are fast to make--that is what I like--fast.

This is a great recipe, but I added my own twist. Instead of potatoes, I used yams. After I mashed the yams, I added a little rice milk and sugar. After the flour step, I dipped the ball into beaten eggs and then I coated it with Italian seasoned breadcrumbs. Maybe about 10-20 seconds in very hot olive oil was all they needed. My husband, who isn't crazy about yams, loved this!
