Good old Southern recipe from Steel Magnolia

  1. Slice the tomatoes 1/4 to 1/8 inch thick Press both sides into meal.
  2. Fry in hot grease or oil 2-3 minutes on each side or until golden brown.
  3. Salt and pepper to taste Varations: For a thicker coating, lightly dredge the slices in flour first and then dip the floured slices in beaten egg.
  4. Dip into a final coat of meal.
  5. Salt and pepper to taste.
  6. You can also"oven fry" slices in a 400 degree oven.
  7. Place the slices on a cookie sheet coated with cooking spray and bake about 8 minutes on each side.
  8. Salt and pepper to taste.
