My husband and I LOVE fried egg sandwiches. We have never tried them with mustard and bacon. How delicious!! Makes our favorite breakfast even better. Love the tang of the mustard. Great idea and thanks for sharing.
This recipe literally brings tears to my eyes. Such a strong memory comes to mind. My grandfather was a factory worker and I remember him walking home for lunch and my grandmother would make him two fried egg and mustard sandwiches. I loved them as a little girl but haven't thought of them in years. I made these the other night for me and my husband. They are just as delicious as I remember. Thanks for posting this and bringing back fond memories.
I scaled this back for 1 serve and baked my bacon in the oven on a baking paper lined tray and cooked up the egg in a little butter in a small frypan and the new edition for me in this very tasty sandwich was the mustard, I used Dijon as I didn't have honey mustard, thank you ratherbeswimmin'.
This was really good! Like others, I've never made my egg sandwiches with mustard before. I was surprised how much I really enjoyed it. Just a little bit of tang in it that was perfect. Yum!! Never thought of using honey mustard on my fried egg sandwich but it is wonderful and we will be making this often. Thanks so very much for the great post.
Yummmm. My dad has made these my whole life, minus the honey mustard. We also like the egg yolks pretty firm. I personally like to use a grainy bread spread with just a bit of butter. My dad uses Miracle Whip on his. I made one for lunch today, and added a slice of cheddar cheese. These are just a perfect, simple, quick meal.

One of the first things my hillbilly hubby requested I make when we were first married, and he still loves them... Now hes got me hooked, too! We always used plain mustrd though, I loved the unique taste that honey mustard gave it!
