    This is something my grandmother used to make for my dad and us grandkids. My husband and I love it and are not ashamed. An old southern classic.

    Ingredients:

    Servings:

    • 8 slices bread, toasted
    • 4 tablespoons honey mustard
    • 8 slices bacon
    • 1 tablespoon butter or 1 tablespoon margarine
    • 4 large eggs
    • salt and pepper

    Directions:

    1. 1
      Spread one side of each slice of toast with honey mustard.
    2. 2
      In a large skillet, cook bacon until crisp; drain on paper towels; crumble and set aside.
    3. 3
      Pour drippings from skillet.
    4. 4
      Over medium-high heat,melt butter in same skillet.
    5. 5
      Crack eggs and let raw egg drop into skillet (I can fry 4 eggs in my skillet, just depends on the size skillet you are using--may have to do this in two batches).

      Cook until desired doneness, turning once (I like the yolks firm).

      Sprinkle with salt and pepper.

      Using a spatula, place each egg on a slice of toast.

      Sprinkle bacon evenly on top of eggs.

      Top with remaining toast slices to make sandwiches.

      My husband and I LOVE fried egg sandwiches. We have never tried them with mustard and bacon. How delicious!! Makes our favorite breakfast even better. Love the tang of the mustard. Great idea and thanks for sharing.

      This recipe literally brings tears to my eyes. Such a strong memory comes to mind. My grandfather was a factory worker and I remember him walking home for lunch and my grandmother would make him two fried egg and mustard sandwiches. I loved them as a little girl but haven't thought of them in years. I made these the other night for me and my husband. They are just as delicious as I remember. Thanks for posting this and bringing back fond memories.

      I scaled this back for 1 serve and baked my bacon in the oven on a baking paper lined tray and cooked up the egg in a little butter in a small frypan and the new edition for me in this very tasty sandwich was the mustard, I used Dijon as I didn't have honey mustard, thank you ratherbeswimmin'.
