This recipe was made on Sandra Lee's cooking show when Reggie Southerland was a guest. He was a former "Next Food Network Star" contestant and this is his recipe. It was on the Food Network Website under her show. It is so good. The only think I may do differently is cut the sugar down to 2 Tablespoons instead of 3.
- 4 tablespoons butter
- 16 ounces frozen corn, thawed
- 3 tablespoons white sugar or 3 tablespoons honey
- 1⁄3 cup heavy cream
- 1⁄2 teaspoon black pepper
- In a large skillet over medium-high heat, melt butter. When butter is foamy add the corn stirring to coat with the butter. Cook stirring frequently for 1 minute. Add sugar or honey and cook for 2 minutes more. Increase heat to high and add heavy cream-continue to stir so corn won't stick to pan. Add salt and pepper. Cook corn until most of the cream has been absorbed, about 5 minutes. Remove and serve hot.
This was quick, easy and had a great flavor (though I admit to not being a big Sandra Lee fan). I used the sugar and will try the honey next time. My only gripe was that the corn was a little spongy which I think was due to the fact that the recipe uses frozen corn. I'd love to try this with fresh or canned corn. Thanks!
