Fried Chicken Thighs Stuffed W/ Swiss Cheese Wrapped in Bacon

Drom the cookbook "HOORAY for Chicken" comes this great little recipe. Easy to make, smells great, tastes wonderful. Season to your taste!


  1. Flatten chicken to 1/4 inches thick.
  2. Slice cheese lengthwise to make 8 even strips.
  3. Place one strip of cheese in center of each thigh.
  4. Fold long sides of chicken over cheese; fold ends of chicken over and wrap each with a slice of bacon, secure with a wooden toothpick.
  5. Combine egg whites and lemon juice.
  6. Combine flour and lemon pepper.
  7. Dip chicken in egg mixture.
  8. Dredge in flour mixture.
  9. Heat at least 1 inch oil to 350°.
  10. Fry chicken 15 minutes or until golden, turning once.
  11. Drain and enjoy!
