- 1 lb chicken liver (approximately)
- 1 cup milk
- 1 egg, beaten
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup flour
- Mix milk and egg; set aside. Mix dry ingredients in separate bowl.
- Soak liver in milk and egg.
- Drain liver.
- Shake in flour mixture and fry.
I only change this slightly. I used wheat flour and added some red pepper flakes. My livers were also still slightly frozen. I've been making fried livers for over half a century, and these were super. I've never soaked them in milk, or used baking powder. I will from now on. I soaked them for only a minute or less; cooked them maybe 5 min. I'm guessing you could soak them for a while, and then cook them slower, but i'd say the total time was 5 min. or less.
These are delicious! I especially like the added crunch that the baking powder contributes to the coating. I might use a bit less the next time, because I thought it added a very slight sharp taste. I'll report back when I've tried them again. Thanks for posting the recipe.
