This recipe came from a KENYA AND TANZANIA web site and is specifically a Swahili recipe. Posted for ZWT4.
- Put oil into a frying pan.
- Fry onions.
- When onions are brown, add all the ingredients except water.
- Fry for 2 to 3 minutes.
- Add water.
- Cover and cook till tender and all the stock is dry.
- Serve hot as a vegetable dish.
Good dish, I like things highly spiced, so probably added about 4 teaspoons of Madras Curry Powder to this (I am sure other spices would work well with it too).
I am not a huge fan of curry but this was very good. It smelled so good while it was cooking and everyone seemed to enjoy it. I think I would decrease the amount of oil next time. I also think that I would put the tomatoes in just a couple of minutes before serving so that it was just enough to heat them through allowing them to release some of their juices.
