Fried Bread and Eggs

"We eat this at dinner, but it can be a breakfast item, too. We never had a name for it, so we just call it fried bread and eggs. It sounds strange to soak the bread in water, but it doesn't come out right if you don't."

  • Soak bread in water.
  • Try to squeeze as much water out as you can.
  • Fry wet bread, diced onions, salt and pepper in olive oil until crumbly and brown. Keep turning it to avoid it burning. Use medium heat.
  • Once it's crumbly, add the eggs. Stir until eggs are completely cooked.

  1. I've prepared bread like this for a Peasant Bread Salad and just love it. I fried a clove of garlic along with the onions (yum!) and served my egg on the side rather that mixed in. Good enough for me to make it two days in a row. Made for New Kids on the Block, a tag game.

I grew up in Lebanon County, PA and really miss some of the Dutch cooking. I am married to a wonderful man from the midwest and am grandma of 6 boys and 3 girls. They are the joy of my life. My mother was born in Lebanon, PA and my dad was from VA. Because of that, we don't know if some of my recipes are from PA or VA. I'm an animal lover to the max! The only thing that I don't like are spiders! Yuck!! I will even handle domesticated snakes! The only thing better than my family and animals, is Jesus Christ! Without Him, I am nothing!
