I really like barley, but you don't really find a lot of different ways to prepare it. Saw this and had to post before I lost it!

This is great! I actually turned it into an Asian-style fried barley, adding in a couple Tbsp. of soy sauce at the end. Went great with teriyaki pork and asparagus. Thanks for posting!
- 1⁄3 cup butter
- 1⁄4 cup chopped onion
- 3 1⁄2 cups quick-cooking cooked barley
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper

- Melt the butter in a frying pan and sauté the onion until lightly browned, about 5 minutes, stirring occasionally.
- Add the cooked barley (cook according to package directions), salt and pepper. Fry until the butter is absorbed, about 8 minutes, stirring occasionally.
