  1. Cook asparagus spears in boiling salted water until barely tender.
  2. Drain on paper towels.
  3. In wide bowl, beat egg with milk.
  4. Dip asparagus spears into egg mixture, then into bread crumbs.
  5. Heat enough oil to cover asparagus to 364 degrees in deep fryer or large skillet.
  6. Diameter of pan should exceed length of spears.
  7. Fry coated asparagus, a few at a time, until lightly browned, about 2 minutes.
  8. Drain on paper towels.
  9. Season with salt and pepper.
  10. Sprinkle with grated cheese.

I was frying up pork chops and didn't want all that hot oil in the deep fryer to go to waste, so when I checked the fridge for another side dish to go with our broccoli. Then I immediately saw the asparagus spears and searched for a recipe like this one. They were a delicious change to my usual 'roasted-in-the-oven variety'. I used seasoned Italian breadcrumbs and didn't even need to blanche the asparagus first. Even my 5yo enjoyed them - now that's a good review! Thanks so much :)

These were definitely good but I had a tough time making them in the skillet. I think these would be a lot easier to make in a deep fryer.
