"Got this off the Fridays website, soooo yummy!"

ingredients

• 1 eggplant
• 2 eggs
• 1 1⁄2 cups breadcrumbs
• 1⁄2 cup parmesan cheese
• 1 cup olive oil
• 2 tablespoons butter
• 1⁄2 cup red wine vinegar
• 1 1⁄2 cups peppadew peppers
• 2 tablespoons sugar
• 16 ounces lasagna noodles
• 1 lb fresh mozzarella ball

directions

1. batter eggplant.
2. cook lasagna noodles.
3. prepare vinigarette.
4. arrange plates with eggplant on bottom and pasta on top.
