A nice easy side dish!
- 1 lb green beans
- 1 tablespoon chopped parsley
- 2 ounces butter
- 1 garlic clove, minced
- 1 pinch salt
- 1 egg yolk, beaten
- 1⁄2 lemon, juice of
- 1 tablespoon parmesan cheese, grated
- Cook the beans in boiling water for 10 minutes, drain then add parsley, butter, garlic and salt, simmer for 10 minutes.
- Remove from the heat and stir in the beaten egg yolk, lemon juice and Parmesan cheese.
- Serve immediately.
These were very tasty, and easy to prepare. I used whole frozen beans. These green beans were special, but the kids thought they were scary and wouldn't willingly eat them.

Very Easy and so good! I used less butter then suggested. The egg/lemon juice/Parm mixture really made them taste like something special! We love them! Thanks!
