This has always been a big hit in my family, we have this all summer long. We use a Bulgarian cheese which is slightly saltier than feta, and also a healthy dose of black pepper. On a hot day with a glass of cold white wine this is a perfect meal.
Loved it! The mint truly makes this special. I did add a drizzle of olive oil, but I don't think it was necessary. Another tip, when I stirred the feta in, it created a white film over the melon. . .so next time I will layer the ingredients in one bowl, then pour slowly into another bowl to mix it up without breaking up the cheese.
