This recipe is best when made with fresh pineapple. The easiest way to peel a fresh pineapple while saving the juice is with a spiral pineapple slicer. If you don't happen to have one available, peel and slice pineapple on a tray or cookie sheet to retain juice.
- Core and hull pineapple, reserve juice. Slice pineapple into bite-size chunks.
- Peel, clean, dice all remaining fruit as desired.
- Mix all fruit together.
- Whisk 1-3 teaspoons honey with reserved pineapple juice.
- Poor over fruit and toss gently to coat. Best when served chilled.
