From 365 Ways to Cook Pasta. Makes enough for 1 pound of pasta. Penne would be good.
- 2 lbs small tomatoes, diced (about 3 cups)
- 1 (6 1/2 ounce) can tuna, drained
- 1⁄4 cup minced red onion
- 1⁄4 cup chopped parsley
- 6 tablespoons olive oil
- 2 garlic cloves, crushed
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- Combine all of the ingredients in a large bowl.
- Toss with hot pasta to serve.
