These are such lovely and fresh tasting spring rolls. I added some julienned carrots but didn't change anything else. Served with Nam Prik Nam Pla Nam Prik Nam Pla (Traditional Thai Sauce). Thanks for a great recipe.

Fresh, exotic, delicious AND healthy! Who could ask for more....oh yea, easy would have been nice. These were a bit fussy to make, and it took me several attempts at getting the right amount of filling so that the rolls stayed together and were manageable. I had medium sized rice paper, and wished I had the larger ones. I think the best amount of filling isn't much more than 3 tablespoons full. We thoroughly enjoyed this recipe Kimke and are so glad you posted this for us to make.
